China is internationally known for its sweet and sour dishes amongst other specialties. China's cuisine has a strong cultural heritage, which is reflected, in the variety of dishes served.

Kung po chicken is a favourite dish of the Sichuan or Szechuan tradition and Chinese cuisine in general. Kung po chicken uses chilli with other sweet ingredients to create a sweet and sour dish that is typical of Chinese cuisine. Kung po chicken is made using chicken that has been marinated in local wine to soak up more flavors. Another source of flavor comes from the oil used.

After seasoning the wok chilies and Sichuan peppercorns are flash fried to bring an extra dimension to all the other ingredients, which are stir-fried.The Sichuan peppercorns are the most important ingredients of the dish, which help to give a contrasting flavor to the chicken, vegetables and peanuts. The preparation methods and flavor make Kung po chicken a unique dish.
